Apple Cupcakes with Cream Cheese Frosting
Fall is here my friends!!!! Which means apples, pumpkins, cinnamon, pies, and turkey. I'm excited. Aren't you?!!
Here in Utah, the trees have begun to change, and the temperature has started its way down. Being from Texas, I used to fear the winter, hate the cold, and shun the colored trees of fall- it only meant that I was closer to disgusting amounts of layers -and colds. But now, I cheer at the sight of orange and yellow leaves, and welcome the decrease in temperature- I now firmly believe, this really is the most wonderful time of the year :D
p.s. I won't judge if you feel like Christmas music already. . . that would make me a hypocrite. (Charlie Brown Christmas playlist? check.)
So now, to help those that aren't quite ready to let go of summer: Apple Cupcakes. Welcome to Fall folks. Enjoy :)
Apple Cupcakes with Cream Cheese Frosting
Makes 12 Cupcakes
For the Cupcakes, adapted from Rachael Ray
2 eggs
1/2 cup white sugar
1/2 cup brown sugar
1/4 teaspoon salt
2 teaspoons vanilla
1/2 cup oil (though I really think this could be halved)
3 small green or golden delicious apples, peeled and grated
1 1/4 cups all-purpose flour
1/2 teaspoon cinnamon
2 teaspoons baking powder
1) Whisk together eggs, sugars, salt, vanilla, and oil. Add the grated apples.
2) In a separate bowl, stir together the flour, cinnamon, and baking powder. Stir in the apple mixture, until just combined.
3) Pour into a lined cupcake pan, until almost full (you may have like 1/4 cup of batter left over. . . which was a great snack while the cupcakes were baking. . . ). Bake at 350 for about 25-30 minutes, until toothpick inserted in center comes out clean.
For the Cream Cheese Frosting, adapted from Better Homes and Gardens
1/4 cup butter, softened
4 oz cream cheese, softened
1 teaspoon vanilla
3 cups powdered sugar
2-3 tablespoons milk, if needed
1) Beat together the butter, cream cheese, and vanilla until smooth. Gradually beat in powdered sugar and whip until smooth (1-2 minutes). Will look a little crumbly at first, but will smooth out. Add the extra milk to make it soft enough to pipe onto cooled cupcakes.

They look wonderful and sound super yummy!Please tell me about your apple grating method? I wonder if using applesauce would be okay without changing the texture?
ReplyDeleteI just grated it on a cheese grater- it was a tad messy, but not too hard. If you have a food processor, that would be a super easy/quick way to grate them. But I bet applesauce would be a great substitute (and definitely cut some time and mess).
