Brownies with Peanut Butter Cheesecake Frosting


Warm Brownies + Peanut Butter + Cream Cheese

 I don't think this diet I have planned... is ever going to happen. Thanks, brownies and peanut butter. They hate me. But I love them. You probably do too. We will suffer our unrequited love together. While eating brownies. (Though it's a little hard to be too down while your eating chocolate).

Basically these are super easy, chocolatey brownies topped with a creamy frosting made of cream cheese and peanut butter (and a few other things). The whole project is pretty simple- and who doesn't love the classic reeses-like combo of peanut butter and chocolate?

Brownies with Peanut Butter Cheesecake Frosting

2 eggs
1 cup sugar
1 teaspoon vanilla
1/2 cup butter, melted (or vegetable oil)
1/4 teaspoon salt
1 cup sugar
1/3 cup unsweetened cocoa powder
1/4 teaspoon baking powder
1/2 cup flour
For the Peanut Butter Cheesecake Frosting
2 oz cream cheese, softened
3 tablespoons unsalted butter, softened
3-4 tablespoons creamy peanut butter
1 teaspoon vanilla
2 1/2 cups powdered sugar
2-3 tablespoons milk
sprinkles (not optional..)

1) To make the brownie: Preheat oven to 350F. In a mixing bowl, combine all ingredients until incorporated, pour into a greased 8 by 8 square pan, and bake for about 20 minutes.

2) To make the frosting: Cream together the cheese, butter, peanut butter, and vanilla for a couple minutes until smooth and completely combined. Add powdered sugar, beating until thick and creamy. Add milk as needed to get a smooth, spreadable consistency.

3) While brownies are still warm, spread frosting evenly over brownies (you may have a little left over). Sprinkle with pretty sprinkles of your choice. I used multi-colored jimmies.

  2. I only used the icing recipe on my own Brownie recipe... but they were the best Brownies ever!
