Peanut Butter Cookies Sandwiched with Marshmallow Buttercream.
Peanut Butter Cookies via Better Homes and Gardens
1/2 cup butter, softened
1/2 heaping cup peanut butter
3/4 cup brown sugar
1/4 cup white sugar
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon cinnamon
1 egg
1/2 teaspoon vanilla
1 1/4 cups flour
1) Preheat oven to 375F. Line a baking sheet with parchment paper.
2) In a large mixing bowl beat butter and peanut butter on medium speed for 30 seconds. Add the sugars, baking powder, and baking soda. Beat until combined. Beat in egg and vanilla until combined. Stir in the flour.
3) Shape dough into 1-inch balls. Place 2 inches apart on baking sheet. Flatten by making criss cross marks with a fork dipped in granulated sugar. Bake for 7-9 minutes or until edges are lightly golden. Transfer to a wire rack and let cool.
Marshmallow Buttercream
1/2 cup butter, softened
1, 7 oz jar marshmallow fluff
2 cups powdered sugar, sifted
1/2 teaspoon vanilla
1) Mix together all ingredients and beat until fluffy. Sandwich between cooled cookies.
